This Week's Recipe...

Granola & Applesauce Morning Muffins
Makes 9–12 muffins

1 1/2 cups granola (choose your favorite)
1 cup all purpose unbleached flour
2/3 cup whole wheat flour
2 tablespoons organic golden flax seed (ground if desired)
2 teaspoons non-aluminum baking powder
1 teaspoon baking soda
1 1/2 cups organic applesauce
1/2 cup milk or substitute
1/4 cup brown sugar
5 tablespoons canola or other vegetable oil
2 eggs
granola or rolled oats for topping

Preheat oven to 400°F. Combine granola, flours, flax seed, baking powder and baking soda in a large bowl. In another bowl, whisk together applesauce, milk, sugar, oil and eggs. Add to dry ingredients and mix just until combined. Divide evenly into muffin tins (use either a non-stick pan or muffin papers) and fill 3/4 full. Sprinkle extra granola or rolled oats on top and bake 18–20 minutes or until tester inserted in center comes out clean. Let cool slightly and remove to a cooling rack.

*Chef's note- I never use cupcake papers, because I feel it is a wastes of paper and in a time of global we need to keep as many trees in the ground as we can!
