This Week's Recipe...

This week I am baking...
Health Nut Muffins

1 ¼ C. flour
¾ C. quick oats ( I also use rolled oats – it makes it heartier)
1/2 C. packed brown sugar
½ C. wheat bran
1 tbsp. baking powder
½ tsp. each
Cinnamon
Ground allspice (don’t have it? Don’t need it)
¼ tsp. salt
1 C. dried cranberries
½ C. halfed walnuts
3 tbsp vegetable oil (I used olive oil)
1 egg beaten

Preheat oven to 350’ and line 12 muffin tins. Stir together all dry ingredients reserving ¼ walnuts. Add other ingredients. Stir just until combined. Spoon into prepared muffin tins (they will be full). Sprinkle walnuts on top.
Bake for 20 to 25 min.
1 muffin = 190 cal, 28g. Carb
( these may be off I have altered the recipe a little bi from the original)

These are a great mid-morning snack! And you avoid buying energy bars with tons off additives and ingredients you can't pronounce.
