I had last weekend off so I took the opportunity to try out new recipes. The menu on Sunday night was: New England Clam Chowder with a baguette and brie cheese. And for dessert a Pear Clafouti! (made from scratch)

Let me just say"YUM"! You all must make this someday!

The chowder recipe is from a cookbook my Mom gave to me called "Cooking light- way to cook"

The Calfouti recipe is from Ina Garten, and here it is....

Clafouti:

Ingredients

1 tablespoon unsalted butter, at room temperature
1/3 cup plus 1 tablespoon granulated sugar
3 extra-large eggs, at room temperature
6 tablespoons all-purpose flour
1 1/2 cups heavy cream
2 teaspoons pure vanilla extract
1 teaspoon grated lemon zest (2 lemons)
1/4 teaspoon kosher salt
2 tablespoons pear brandy (recommended: Poire William)
2 to 3 firm but ripe Bartlett pears
Confectioners' sugar
Creme fraiche

Directions

Preheat the oven to 375 degrees F.

Butter a 10 by 3 by 1 1⁄2-inch round baking dish and sprinkle the bottom and sides with 1 tablespoon of the granulated sugar.

Beat the eggs and the 1⁄3 cup of granulated sugar in the bowl of an electric mixer fitted with the paddle attachment on medium-high speed until light and fluffy, about 3 minutes. On low speed, mix in the flour, cream, vanilla extract, lemon zest, salt, and pear brandy. Set aside for 10 minutes.

Meanwhile, peel, quarter, core, and slice the pears. Arrange the slices in a single layer, slightly fanned out, in the baking dish. Pour the batter over the pears and bake until the top is golden brown and the custard is firm, 35 to 40 minutes. Serve warm or at room temperature, sprinkled with confectioners' sugar, and creme fraiche.

Last week I was inspired by a couple of my friends to start exercising. I bought myself a fancy pair of running shoes and I have walked 5 days this week! I insert some running and I try to do more each time. My goal is to run a 1/2 marathon someday! Here we go...!

Butternut Squash and Vanilla Risotto

On a whim I bought two butternut squash at the farmers market on Sunday. Tonight for dinner I made Giada's Butternut Squash and Vanilla Risotto and oh my gosh it was soo good! I hope you will give it a whirl too!

Recipe:

Ingredients

4 cups vegetable broth
1 large vanilla bean
3 cups peeled cubed (1-inch wide) butternut squash, about 12 ounces
2 tablespoons butter, plus 1 tablespoon
3/4 cups finely chopped onion (from 1 onion)
1 1/2 cups Arborio rice or medium-grain white rice
1/2 cup dry white wine
1/2 cup freshly grated Parmesan
1/2 teaspoon salt
2 tablespoons finely chopped fresh chives

Directions

In a medium saucepan, warm the broth over medium-high heat. Cut the vanilla bean in half lengthwise. Scrape out the seeds and add them, and the bean, to the broth. When the broth comes to a simmer reduce the heat to low. Add the butternut squash to the simmering broth and cook until tender, about 5 minutes. Using a slotted spoon remove the butternut squash to a side dish. Turn the heat on the broth down to very low and cover to keep warm.

Meanwhile, in a large, heavy saucepan, melt 2 tablespoons of the butter over medium heat. Add the onion and saute until tender but not brown, about 3 minutes. Add the rice and stir to coat with the butter. Add the wine and simmer until the wine has almost completely evaporated, about 3 minutes. Add 1/2 cup of the simmering broth and stir until almost completely absorbed, about 2 minutes. Continue cooking the rice, adding the broth 1/2 cup at a time, stirring constantly and allowing each addition to of the broth to absorb before adding the next, until the rice is tender but still firm to the bite and the mixture is creamy, about 20 minutes total. Discard the vanilla bean. Turn off the heat. Gently stir in the butternut squash, Parmesan, the remaining tablespoon of butter, and salt. Transfer the risotto to a serving bowl and sprinkle with chives. Serve
immediately.

I just finished a week as a counselor at Bearskin Meadow Diabetes Camp. It was a great experience and I learned a lot about how different individuals deal with the disease. I was also able to share my experiences with others. I had a good group of campers and I had an even better group of fellow counselors to spend spare time with. It was a bit rough at the beginning but by the end I had a new home. Thank you Chelsea.

My oldest friend Elisa got married at the beginning of June! I was one of her bridesmaids in both of her weddings. She married Indo Chohan who is Sikh, hence the two weddings...props to both religions. It was a lot of fun and I thought my friend looked gorgeous and held herself with grace. Congratulations!

So Kevin convinced me to go camping....aaanndd if you know me...sleeping outside ain't my thing. But Kevin outfitted his truck with a camper shell and we got some new/ old equipment and we were off. Lets just sayyy it was a special getaway. The greatest thing was picking the one day out of all of JUNE! that rained....Well...I don't want to go on about it...but it ended up being ok.

"Idiom-Synchronies" was another group show which included 17 different artists; either SJSU students, SJSU masters students or SJSU graduates. Ingredients: 

Servings: 24
Servings Size
 muffins 
    1 Box spice cake mix
15 ounces Pumpkin
1 cup water

Directions:

Prep Time:  5 mins Total Time: 30 mins

     Mix all ingredients in mixer.
 Makes 24 muffins.
 Cook for 20-25 minutes at 350°F.
 They will be very moist.

Whew! A tiny break in life much needed. I know it is only the beginning of my new busy schedule but man. I was so happy to sleep late and enjoy my coffee in bed today (instead of slurping it down as fast as possible in the office at Starbucks). I also got to hang with my parents for a bit in Berkeley. I needed some things from home and they were so great to meet me, we had a little lunch, a little strolling and some awesome ice cream sandwiches.

I even have enough time to chill at home tonight so I can make dinner with fresh produce from my parents backyard! I hope you all had a chill day today to.

This this semester's painting class I wanted to use salvaged doors. Previously I have been using door skins but they were new and I had to construct them. So I went to a salvage yard in Easy Palo Alto and found three gently used light weight doors! Only $10 a piece! I had to figure out how to patch the doorknob holes but I think they are going to work out well- Mother Earth I love you. Here they are being prepped in the studio.The Salvage yard

 Since I was a kid back in Yuba City a summer's Saturday nice was always filled with good fresh food and public radio. Since then and after leaving home especially I have taken to listening NPR more and more. Its a comforting wonderful old time thing (plus- I don't have a TV) that keeps me up-to-date. Well the root program that I have listened to is A Prairie Home Companion: Garrison Keillor, Royal acting Co, Guy's All Star Shoe band! My sister and I got to see the show in real life last night! It was wonderful and it lived up to all my expectations, it was quality entertainment and it made me feel good...which was good after a stinky day at school. I hope that someday I could go to Minnesota (In Summer!) To see the show in its home theater.Thanks PHC. (My sister took pics so I will update with them soon).

Na nun nun...The first day back at SJSU. Hem well I have to make the best of it. So many classes have been canceled because of funding its sad,I might lose my print class and then I will be screwed. I am also taking a metal sculpture class in the art foundry- which it not on campus and right now feels like hell in side. I have my BFA seminar next, i think that one will be pretty easy. Fingers crossed. I hope this semester doesn't drive me to insanity.

Had my first day at my new (2nd) job today! I now newly work for Anthropologie in Palo Alto! It seems to be a very interesting company and I love the environment. I only did training today but next week I will be starting real shifts! As I move forward in my new position I wil be able to tell you about all sorts of cool things about it! I start back to college in one week! It is crazy how fast the summer went by and it is also crazy that my 24 self it still in college...im an art major...what can I say. I am going to be super major busy this next semester/ year. I have decided to take on two jobs and a full load of classes- we shall see how long my sanity lasts. I think it will be good.
The cottage is coming along, I am waiting for more things to put on the walls and for my funds to become larger so I can 'finish' it. I would like to paint the kitchen and stuff eventualy.
The garden is also looking pretty good- things are growing but I have many ideas for the next spring! I also have attempted growing pumpkins (which I planted too late and probablt wont get any or they will be ready in January)
i have started missing Italy. The way of life I lived there and how people in general go about there days: walking to the market, sipping espresso's and having fantastic pizza dinners at 9:30 at night...hem.
I have lots of ideas for my upcoming art projects and 'life' projects and I am excited to share them with you!

Hi all-

Here is a small update. Home...home in the Campbell cottage and back in the same ol' routines. I know I have not updated in awhile...well because I have much more...'lack-luster' life then I had a year ago. So I want to focus on how great a little life can be too! Jet setting and living in a foreign country is great but so is being home for awhile. I hope to focus on my friends, family, job, art and school... and maybe extra fun things too!

Raspberry Buckle

Ingredients

Serves 6

1/2 cup (1 stick) unsalted butter, room temperature, plus more for baking dish
1 cup granulated sugar
3 large eggs
1 cup all-purpose flour (spooned and leveled)
1/2 teaspoon salt
1/2 teaspoon baking powder
2 containers (1/2 pint each) raspberries (2 3/4 cups)
Confectioners' sugar, for dusting (optional)
Whipped cream (optional)

Directions

Preheat oven to 350 degrees. Butter a 2-quart oval or square baking dish. In a large bowl, cream butter and sugar with an electric mixer until fluffy. Add eggs, one at a time, beating after each addition to combine. In a large bowl, whisk together flour, salt, and baking powder; with mixer on low speed, gradually add flour mixture until incorporated.
Spread batter in baking dish. Scatter raspberries on top. Bake until a toothpick inserted in center of cake comes out clean and top is golden brown, 45 to 50 minutes. Let cool 20 minutes; dust with confectioners' sugar, if desired. With a large spoon, scoop out onto serving plates; serve with a dollop of whipped cream, if desired.

So, I did go whale watching last Thursday! It was wonderful! i am trying to get the post up but uploading vids. is tough with a bad internet connection. I am hoping to have stuff up this week.
I am also starting back to work tomorrow morning...back to Starbucks. I am a bit nervous but I think it will all come back to be. Wish me luck.

I had a good weekend! For the third Saturday in a row I was in San Fransisco. I drove up after a job interview in Palo Alto and went to the Renegade Craft Festival! There was a lot of really cool stuff there- I wanted so much stuff! I love knowing that there are some many crafty people out there.
I then picked up my friend Toby and we drove to Benecia for Michael's 22nd Birthday! I hadn't seen him since we were in Florence so it felt good to see him again. I also got to meet the Thurin family! They are great people the welcomed me in and had a lot of fun with!
We got the grand Benecia tour from Michael the next day and liked it very much. Thanks for a good weekend!

I heard about the whale sitings off the coast near Carmel and decided to try my luck and see them.It was a beautiful day and I headed out to Point Lobos Park. It was a nice hike but the only wildlife I saw were seals, quails, a bunny and lots of birds. It was a nice day anyway.

John "Bonzo" Bonham's Grave- I have wanted to come here to pay my respects to one of the most influential drummers and member of my favorite band...for a long time. It was an incredible experience and one I wont ever forget.
